(GD, DF, egg free)
Time: 60 minutes
Serves: 10-12 slices
Ingredients:
- 2 medium bananas ( 1 cup mashed)
- 1/2 cup dairy free milk (this used almond milk)
- 1 tbsp Apple Cider Vinegar (ACV)
- 1/4 cup Monk Fruit or coconut sugar
- 2 tsp vanilla extract1/4 cup melted coconut oil
- 1 1/2 cup GF oat flour (alternative can blend oats)
- 1 cup almond flour
- 1 tsp cinnamon
- 2 tsp baking powder
- 1/2 tsp salt
- Optional to mix through or sprinkle on the top:
- Crushed walnuts
- DF Chocolate chips
Method:
1. Preheat oven to 180 degrees then prepare a loaf tin with baking paper or grease with oil/butter
2. In a blender or electric mixer, combine bananas, milk, vinegar, monk fruit and vanilla extract until smooth. Pour into a large mixing bowl and add melted oil
3. In a seperate bowl, mix the oat flour, almond flour, baking soda, baking powder, salt and cinnamon ensuring no umps are remaining
4. Add the dry ingredients to the wet ingredients in four parts to ensure the flour is incorporated together evenly. Fold in choc chips or walnuts once combined
5. Transfer batter into the loaf tin and add an extra banana, choc chips or walnut on the top if desired.
6. Bake for approximately 45-60 minutes or until a skewer comes out clean
7. Allow to completely cool before slicing and enjoy!
